Larb Gai (Chicken Salad)
ลาบ ไก่ Larb means – prosperity or lucky in Thai. Larb is often served with sticky rice on special occasions such as birthdays, weddings, anniversaries, festivals and to celebrate the New Year in hopes of bringing plenty of luck and prosperity for the coming year. Larb is my speciality as it is from my home region of Isan. With a good larb you should be able to taste the sour and spicy flavours with a nutty crunch from the roasted rice. Made with minced chicken cooked with garlic then seasoned with lime juice, chillies, seasoning sauce to which is then added our in-house ground roasted rice which makes Larb unique from other Thai salads. The larb then gets topped with fresh herbs like coriander, spring onions, finely chopped kaffir lime leaves, shallots and mint.
